Apple pie recipe for a diabetic?
My grandmother was diagnosed with diabetes earlier this year and I would like to make her an apple pie for Thanksgiving since it is her favorite. I am not having much luck finding one that includes the pie crust as well as the filling. She said that she would just eat the filling, but I would love for her to be able to enjoy the whole thing. If anyone knows a recipe or a site or book that has one please let me know. Thank you so much.

- Hi Anna,, Classic "Crisco Pie Crust" is easy to make,,and one of Best. If there's any "trick",,it to keep the ingredients Cold. Use Ice water,,and keep the Crisco chilled in the fridge till ready to use it.. Pie Crust,,and all Pastry Crust get's it's Flakiness from having Chunky spots of shortening swirled or marbled thru the dough. It's NOT like cake mixes where everything needs to be Well mixed very thouroughly. You can practice Crusts a few times,,it's cheap & easy. OR,,Many Grocery Stores have PreMade Pie Shells/Crusts in Frozen Foods section Try the Crisco Crust,,,,You'll be surprised. - Just substitute Splenda for the sugar.
- My husband just found out he was a diabetic last year, and we made an AMAZING apple pie for Thanksgiving and it turned out great (in Canada we celebrate Thanksgiving in October, so it's already come and gone for us). I also used the recipe on the Crisco box for the crust (have for years) and it turned out great. Doesn't have any sugar in it, but she will still need to portion control as it's carbs and fats (all pie crusts are). For the filling, I simply mixed my apples with a bit more flour, butter, cinnamon, and a few tablespoons of Splenda instead of sugar. Once I was done with the filling and the crust, I sprinkled another teaspoon of Splenda on the top. Check out your grocery store -- I find that Splenda works great as a sugar replacement in most baking recepies. It measures just like sugar. You might also want to check out their website for a few other dessert recepies. I'm sure that your grandmother will really appreciate the kind gesture!
