  1. Buy good, firm apples such as Granny Smith. Wash apples, remove stems and dry with a kitchen towel. Push one stick into the center of each apple. Push into the top of the apple, where the stem would be. Set apples aside. Unwrap caramels and place with the water in a large microwaveable bowl. Microwave on High until caramels are melted, stirring every minute. Remove caramel mixture from microwave. Hold each apple by the stick and dip into hot caramel sauce, turning to coat. Let excess drip back into pan. Scrape caramel off the bottom of the apple with a knife, or use the edge of the bowl. Place coated apples on a greased baking sheet and put in refrigerator for 15 minutes or more, until caramel is set. Store caramel apples in the refrigerator.
  2. 8 oz. Philadelphia cream cheese 3/4 c. brown sugar 1/4 c. white sugar 2 tsp. vanilla 1 c. chopped dry roasted peanuts Apples sliced or wedged (Granny Smiths are great choice) Cream and blend all ingredients except for optional nuts with blender or mixer. Add nuts if desired or have bowl separate for additional dipping. Variation: Spread cream cheese onto plate (thin layer). Drizzle ice cream caramel topping over this. Sprinkle chopped peanuts over.
  3. Prep time: 10 minutes plus refrigerating Microwave cooking time: 7 minutes Ingredients 4 or 5 medium apples Wooden sticks 2 packages (14 ounces each) caramels (96 pieces), divided 4 tablespoons water, divided First Caramel Layer Wash and dry apples; insert stick into stem end of each apple. Microwave 1 package of the caramels and 2 tablespoons of the water in small deep microwave-safe bowl on HIGH 2-1/2 to 3-1/2 minutes or until smooth, stirring every minute. (If caramel sauce is too thin, let stand about 2 minutes before dipping apples.) Dip apples into hot caramel sauce; turn until coated. Scrape excess sauce from bottom of apples. Place on greased wax paper. Refrigerate 1 to 2 hours. Second Caramel layer After refrigerating, repeat microwaving and dipping directions with remaining 14 ounce package caramels and 2 tablespoons water for second caramel layer.
