Coconut cream pie recipe & how long will it last?

I am planning to make a coconut cream pie for my boyfriend, but he lives 3 hrs away. I know it's supposed to stay refrigerated, but does anyone know if it is okay to have it at room temp for about 3 hours? Also, if anyone knows of a good recipe for that pie, I'd love to hear it - thanks!

Basic 1/2 cup sugar 5 tablespoons all-purpose flour 1/8 teaspoon salt 1/4 cup milk, cold 1 1/2 cups milk, Scalded 3 egg yolks 1 teaspoon vanilla extract 1 cup coconut, Shredded 1 pie crust, baked (9-inch) Blend sugar, flour and salt with the cold milk. Add scalded milk, gradually, stirring constantly. Cook on a low heat until thick. Add beaten egg yolks. Cook 2 minutes longer. Remove from heat. Add vanilla extract and coconut. Cool then pour into previously baked pie shell. Cover with meringue (recipe follows). Makes one 9" pie. To Make Meringue: use 3 egg whites to cover a 9" pie shell. Use 2 level tablespoons granulated sugar for each egg. Beat egg whites until stiff. (They should be glossy on top and when you invert the bowl, they should remain in place.). Fold in the sugar,gradually. Cover the pie with meringue. 2. Kick it up with Chocolate Coconut Cream Pie Crust 2 ounces unsweetened chocolate 2 tablespoons butter 1 cup confectioners' sugar 1 1/2 cups flaked coconut Filling 2/3 cup sugar 1/3 cup cornstarch 1/4 teaspoon salt 4 eggs, separated 2 cups whole milk 2 teaspoons real vanilla 1 tablespoon melted butter 1 cup flaked coconut Topping whipped cream chocolate shavings Crust:Melt chocolate and butter in small saucepan over low heat. Place sugar into bowl. Add butter/choc to sugar. Add coconut and mix well. Press into pie pan and chill. Filling: Combine sugar, cornstarch, salt and egg yolks in a bowl. Add warm milk slowly to sugar mixture. Pour back into a sauce pan and cook over med. heat stirring constantly until thickened. Add vanilla and coconut. Cool slightly. Pour filling into chilled chocolate crust. Cover filling w/ a thin coating of butter and cool. Serve w/ whipped cream covered w/ chocolate shavings. Enjoy
