I ran across a very easy sounding recipe for one just this morning: Shepherd's Pie (Cottage Pie) Ingredients 1 1/2 lb. ground beef or chicken 1 can italian tomato paste 1-2 cans kitchen cut green beans 1 can sliced mushrooms 1 C. shredded cheese of your choice mashed potaoes to cover receipe Directions Cook meat until done. Add tomato paste and stir to combine. Put meat mixture in bottom of a large pie plate or deep casserole dish. Layer green beans, mushrooms, then cheese. Cover to the edge with the mashed potatoes leaving a hole in the center for a vent. Heat in a 350-degree oven untill bubbly. Remove from oven, and let stand for 10-15 minutes. Serves 4 to 6. Note: When I make this, I think I'll use half green beans and half corn. Here's anotherone that sounds delicious, but isn't quite as easy: Shepherd's Pie with Garlic Romano Potatoes This is a very easy shepherd's (cottage) pie that's topped with wonderful garlic and Romano potatoes. You can change the ingredients to add almost anything you like. Kids love this, and it's even better after sitting for a day. You should have most of the ingredients on hand so no trips to the grocery! You can substitute any cheese for the Romano, as well. Ingredients 1 lb. ground beef 1/2 C. chopped onion 1 tsp. dried rosemary 1 tsp. dried basil 1 (8 oz.) can tomato sauce 1 (14.5 oz.) can diced tomatoes, drained 2 (15 oz.) cans mixed vegetables, drained 2 lb. red potatoes 1/2 C. butter 1/2 C. grated Romano cheese 2 Tbs. minced garlic 1 tsp. salt 1 tsp. dried oregano 1/3 C. milk Directions Preheat oven to 375 degrees F (190 degrees C). Lightly grease a medium baking dish. Place the beef and onion in a skillet over medium heat. Season with rosemary and basil. Cook until beef is evenly brown; drain grease. Mix in tomato sauce, diced tomatoes, and mixed vegetables. Cook and stir until vegetables are heated through. Transfer to the baking dish. Place potatoes in a pot with enough water to cover, and bring to a boil. Cook 10 minutes, or until tender. Remove from heat and drain. Mix butter, Romano cheese, garlic, salt, oregano, and milk into the pot. Mash together with a potato masher. Top beef and vegetables with the mashed potatoes. Bake 30 minutes in the preheated oven. Turn oven to broil, and continue cooking 3 minutes, until potatoes are golden brown. Yield: 8 servings.

  3. Normally you'd use leftover stew or roast so the meat will be tender. However, if you don't have any, try chicken: In a 2 tbls. of olive oil, over med. heat, sautee chopped onion, carrot, and celery until soft. Add 2 tbls. of flour and stir until flour is completely incorporated. Add a little more oil if necessary. Add one can of chicken stock, a little salt and pepper and a teaspoon of dried tarragon, and simmer until it thickens a bit. Add 1-2 cups cut up, cooked chicken. Pour into a prepared pie crust. Top with premade mashed potatoes. Bake at 375 degrees Fahrenheit until mashed potatoes are golden brown. Sprinkle with cheddar cheese and return to oven until cheese melts. Altogether about 35 minutes.
  4. Here is the link I found with "easy-to-follow" along with pictures on every steps.... I did it twice. Boy, my children loved them so did my husband. He thought I bought them from a farm store. Can use in a regular glass 9x13 pan or in 2 deep dish pie crusts. My family prefer pie crust. Ha ha! I find myself preparing 30-40 minutes, depending how fast you are... plus takes 30 minutes to cook in 400 degrees. Very simple recipe. Minced beef or lamb Finely chopped onion, 1 med " " celery, 1 stick Chopped carrot, 1or 2 Salt and pepper. 1/2 pint beef stock. 6 med potatoes Fry the meat till browned in a little olive oil Remove from pan, set to one side Put all veg into pan and sweat off, 3/4 mins. Return meat to pan, add stock and bring to the boil. Add a little salt and pepper Simmer for 45 mins, Skim off any excess fat and thicken with corn flour, bisto or gravy granules. Put into serving dish Boil and mash potatoes Cover the mince mix with potato Put a few knobs of butter, or grated cheese on top At this point you have 2 choices, you can Finish off by browning under the grill, or Bake in very hot oven for 15 mins, till golden brown.   6. Minced Lamb, (for cottage pie use minced beef). Onion. Mushroom ,cut very fine, same with the onions. A dash of worcestershire sauce. Fry off the mince, add the onions and mushrooms,add the worsectershire sauce, not too much mind. Peel and chop your potatoes, not too small pieces as they just boil away to nothing.. Drain when you think they are cooked, and mash using milk and butter. Put the mince etc into your serving dish, spread it nice and even, put the mash on the top, again, nice and even. Grate some cheddar cheese (this is optional) and sprinkle over the top. Place the whole creation into the oven and leave until the cheese or the potatoes have gone golden brown. Serve with gravy and your choice of vegetables and enjoy... Steve
