i can remember having shepherds pie one day at school and it was so delicious!but now i'm having trouble trying to find the right recipe..and i'm not sure if the recipe included cheese?any help with this would be appreciated. i'm looking for simple recipes here...and i thought the cheese went UNDER the mashed potatoes?and i plan on making it with beef,not lamb.

Cottage Pie is made with minced Beef 1 onion, diced 1 tablespoon olive oil 1 lb. lamb, minced 1 clove garlic, crushed 1 large carrot, diced 1 beef stock cube 1 lb. chopped tomatoes 1 tablespoon corn flour 3 tablespoons tomato puree pinch of salt and pepper 2 lb. potatoes 1 stick butter This is how to make a real English shepherds pie, made with lamb. If made with beef, it would be known as cottage pie. Firstly, heat the olive oil in a pan, add the onion, garlic and carrot and cook until soft. Add minced lamb and stock cube, then cook until the mince is brown and shows a crumbly texture. Stir in the tomatoes and tomato puree, and add the corn flour. Leave to simmer, stirring occasionally, for about fifteen minutes, or until thickened. Meanwhile, peel and chop potatoes and boil until soft, then mash them with the butter and salt and pepper to taste. Put the filling into a deep dish, then top with the mashed potatoes and put under a warm grill (broiler) until the top is brown and crisp. Delicious topped with melted cheese. Enjoy!

Shepherds Pie 2 medium potatoes, cubed 1/2 cup milk 4 tablespoons butter, separated 1 pound ground beef 1 medium onion, 1/4-inch dice 1 medium carrot, 1/4-inch dice 1 medium celery stalk, sliced 1/2 pound mushroom, sliced 2/3 cup frozen peas 2 tablespoons fresh parsley, chopped 1 teaspoon dried thyme 1 teaspoon Worcestershire sauce 1/8 teaspoon nutmeg 1 cup brown gravy Salt and pepper Peel potatoes and cut into cubes. Place in cold salted water and bring to a boil, reduce heat to low boil until potatoes are fork tender, about 15 minutes. Drain potatoes and mash with milk and 2 tablespoons of the butter until smooth. Season with salt and pepper to taste and set aside. Brown ground beef in a large saucepan over medium-high heat. Remove ground beef from pan and drain off excess fat, reserving 3 tablespoons of fat. Put reserved fat in saucepan add onion, carrot, and celery. Sweat for 5 minutes until onion becomes translucent, add mushrooms, and frozen peas saute for 5 more minutes. Return ground beef to pan along with parsley, thyme, Worcestershire, and nutmeg, simmer for 1 to 2 minutes. Add brown gravy to pan simmer 1 to 2 minutes, season to taste with salt and pepper. Remove from heat and let cool. Preheat oven to 400 degrees. Layer bottom of a 3-liter casserole dish with beef mixture, top with mashed potatoes making uneven peaks with a fork. Cut remaining butter into small cubes and sprinkle over mashed potatoes. Bake for 30 to 40 minutes until mashed potatoes have turned golden brown, remove from oven and let cool 5 minutes.

  9. 1 1/2 lbs ground round beef 1 onion chopped 1-2 cups vegetables - chopped carrots, corn, peas 1 1/2 - 2 lbs potatoes (3 big ones) 8 tablespoons butter (1 stick) 1/2 cup beef broth 1 teaspoon Worcestershire sauce Salt, pepper, other seasonings of choice 1 Peel and quarter potatoes, boil in salted water until tender (about 20 minutes). 2 While the potatoes are cooking, melt 4 Tablespoons butter (1/2 a stick) in large frying pan. 3 Sauté onions in butter until tender over medium heat (10 mins). If you are adding vegetables, add them according to cooking time. Put any carrots in with the onions. Add corn or peas either at the end of the cooking of the onions, or after the meat has initially cooked. 4 Add ground beef and sauté until no longer pink. Add salt and pepper. Add worcesterchire sauce. Add half a cup of beef broth and cook, uncovered, over low heat for 10 minutes, adding more beef broth as necessary to keep moist. 5 Mash potatoes in bowl with remainder of butter, season to taste. 6 Place beef and onions in baking dish. Distribute mashed potatoes on top. Rough up with a fork so that there are peaks that will brown nicely. You can use the fork to make some designs in the potatoes as well. 7 Cook in 400 degree oven until bubbling and brown (about 30 minutes). Broil for last few minutes if necessary to brown.
